Kansas recipe-sandhill plum jelly

Sandhill Plum Jelly

5-1/2 cups prepared Sandhill plum juice
1 box Suregel powdered pectin
7-1/2 cups sugar

• bring the juice and pectin to full boil in large 6 quart pot. Dump in all of the at once and return to a full rolling boil and boil for one minute. Skim off the foam and pour into 10 sterile half pint jars. Seal with sterile 2 piece lids and process at least 15 minutes in a boiling water bath.

I made 19 jars of this last summer using this recipe. It works fine.

Egads...sorry that leaves out how you get the juice. I went old fashioned with this. Boiled the sandhill plums, pits and all, until they were cooked through. Then put them in a cheesecloth bag and let the juice drip through. (you could use a pillowcase). I cheated and squeezed on the cheescloth to get all the juice out.
