With cool weather veggies popping up, it might be a good idea to think about some of the edible things we tend to throw away. Like the pea hull.
Don't throw them out or to the chickens, instead, make some Jelly
Pea Hull Jelly
4 cups juice from cooked hulls
5 cups sugar
1 package pectin
Wash pea hulls well, use as many as you wish.
Cover with water. Boil until tender.
Drain juice through several thicknesses of cheesecloth, reserving the liquid. Add pectin to measured liquid. Bring this to a boil.
Add sugar and return to a hard boil (can't be stirred down). Hard boil for 10 minutes.
Pour into hot sterile jars and seal. Water bath for 5 minutes.
You don't have to use purple, green works just as well.

I've wanted to try this but never did last year, maybe this year. The leaves, especially the young ones of all the cowpeas are edible cooked as a green...very nutritious. We tried them and liked them better than many other greens. Not bad for one plant, all those uses
Phelan, I have never heard of this! What does it taste like? I'm definitely going to try it this year (if the bunnies don't eat my pea plants before I get them!) Thanks!
